Tree House Catharsis and Rainbow Chocolate Shot Cookies
On St. Patrick’s day, green is the color du jour and for good reason. Green beer, green bagels, green donuts, there’s a million and one ways to display your Irish pride. This year we wanted to do something with the other imagery from this festive day, the rainbow that leads to the pot of gold. Or on this case, rainbow cookies that lead to a can FILLED with gold.
The Beer: Another awesome offering from Treehouse. Catharsis is a porter brewed with chocolate and caramel malts. Lots of chocolate notes with a really delightful finish. Some porters and stouts give me the, “I can only have one of these” feelings. This one gives me the, “I’ll have another” kind of feeling.
The Cookie: For Saint Patrick’s Day this year we had an idea that turned out better than we had imagined. We used our old family chocolate shot recipe and threw in a little rainbow coloring. The colors didn’t change any of the awesome vanilla oatmeal cookie and chocolate shot awesomeness. We did a pairing with a non rainbow version of this cookie a while back, check it out.
The Pairing: I enjoyed this combo a lot. The dunk was the preferred method, but it works any way you do it. The rainbow cookies were such a treat that along with dunking, I just used the tasty brew to wash down the crummy goodness.
